Mango Prawn Curry Recipe

250g of Prawn

1 Sachet of Mango Prawn Spice Mix

¼ cup of coconut milk

 1 Red Onion(medium),

chopped fine

2 Green Chillies, Chopped

 ½ semi or fully ripe mango, skinned & chopped

1 Sachet of Tempering Mix

¼ cup water + ½ cup water at the end

Coriander leaves, chopped

1 tablespoon of coconut or vegetable oil

Salt to Taste

Method for Curry:

1. Heat oil in a saucepan or pot.

2. Add mustard provided in tempering mix to oil.

3. Once mustard seeds start to pop, add the onion and chillies.

Cook till onions are translucent.

4. Add salt, spice mix, chopped mango and sauté for 2 minutes.

5. Add ½ cup water and ¼ cup coconut milk. Stir well and bring to boil.

6. Top up with water if gravy is too thick and bring to boil again.

7. Tip in the prawns and cook fully.

Do not overcook as prawns will get rubbery.

8. Check for salt and garnish with coriander leaves. Enjoy!
