Prawn/Crab Curry Recipe

250g Prawn/Crab

1 Sachet of Prawn/Crab Curry Mix

Half Red Onion 
(medium),  chopped fine

¼ cup water + ¼ or ½ cup water at the end

1 tablespoon coconut oil 

 Half Tomato (medium), chopped fine

Salt to Taste

1/2 Pandan Leaf, cut into strips

Method for Curry:

1. Heat oil in a saucepan or pot.

2. Add onions and sauté till translucent.

3. Add tomato and fry for 5 mins till it becomes a paste.

4. Add Pandan leaves, Prawn/Crab curry spice mix & fry for 5 min

5. Add ¼ cup water and let mixture boil.

6. Add prawns/crabs and coat well with spice paste.

7. Cover and cook for 5 mins or till prawn/crab lets out juices.

8. Add salt and simmer for another 5 mins.

9. Add another ¼ or ½ cup water, a little at a time if curry is too thick.

10. Taste for spice and salt.

Adjust with a tablespoon of coconut milk or cream if too spicy.

11. Enjoy with Rice or Bread (Chappati, Naan, Prata or French Loaf).
